The processes of disinfestation, sanitization and pasteurization of dried mushrooms are critical to ensuring food safety, while preserving product quality and eliminating harmful microorganisms.

Radio Frequency (RF) technology offers a highly effective solution for these challenges. By uniformly and gently heating the product, RF technology eradicates pests, bacteria and pathogens without compromising the mushrooms’ flavor, texture, or nutritional value. Compared to conventional methods, RF pasteurization is faster, more efficient and extends shelf life while maintaining the product’s natural properties.

A breakthrough in the efficiency and sustainability of a production process.

In the fast-paced world of food processing, maintaining high product quality while meeting the market demand for faster delivery is no easy feat. For a leading European food processor, renowned for its expertise in poultry products and poultry-based ready meals, this challenge became a pivotal focus.

The company sought a solution that would not only speed up their production cycles but also ensure that the quality and texture of their products remained consistently high. The solution came in the form of a radio frequency (RF) equipment, specifically the Stalam’s “Coldwave+” defroster.

For years, traditional defrosting methods (tempering rooms, forced-air cabinets, water bath, etc.) have been the standard in the industry. However, these methods are slow, energy-intensive and result in uneven defrosting, which affects the texture and quality of the product other than generating bacterial growth issues.

The company faced mounting pressure to improve efficiency and reduce energy consumption, all while adhering to strict product quality and sustainability goals. With defrosting times of its poultry meat stretching far longer than affordable, the company recognized the need for a change.

Over a decade ago, the company had already explored RF technology during its early stages in defrosting applications. At that time, there was a misconception equating RF with MW technology, which had not yielded successful results in a different facility. This misunderstanding led to a halt in RF-related investments.

In the summer of 2023, they revisited the RF technology, inspired by the impressive number of Stalam RF units successfully operating in the market. With a deeper understanding of RF technology and its distinction from MW, coupled with valuable insights from another German poultry industry customer already utilizing two Stalam RF machines, they confidently decided to invest in RF equipment.

The RF “Coldwave+” defroster, a highly advanced piece of equipment, delivered what was meant for. Its ability to rapidly and evenly defrost all kinds of frozen meat without compromising in quality, made it the choice for the company.

The RF “Coldwave+” defroster works by using radio frequency energy to penetrate food products uniformly. Unlike traditional defrosting methods, which rely on external heat sources and heat transfer through the product surface, the RF energy is absorbed directly by the food throughout its entire mass, thus enabling a uniform and rapid defrosting process.

The modular design of the RF “Coldwave+” defroster allowed the company to integrate it smoothly into their existing production line. Due to the large defrosting capacity required, three RF modules were assembled in-line, yet with a minimal disruption of daily operations in the company. And despite its advanced technology, the equipment proved to be incredibly user-friendly, requiring little training to the operators and delivering quickly and consistently the expected results.

The results were nothing short of transformative. The company saw a drastic reduction in defrosting time, increasing dramatically the production throughput. What’s more, the quality of the defrosted poultry was excellent: texture, flavor and nutritional value were preserved at their best. The uniform distribution and accurate control of the RF energy delivered to the product’s entire mass ensured that the poultry was never overexposed to heat (i.e. over-defrosted on the surface), which had been a common issue with older defrosting methods.

In addition to saving time, the company experienced a reduction in energy consumption, which not only helped cut operational costs but also aligned perfectly with its sustainability targets. The RF “Coldwave+” defroster’s energy-efficient operation has proven to be an invaluable asset, reducing the company’s environmental impact while improving its overall profitability.

Once more, a first-class company in the seafood industry has successfully adopted Stalam’s radio frequency (RF) rapid defrosting technology. The company, involved in the processing of tuna and swordfish for sale to restaurants and retailers, found the RF technology to be the best solution to defrost its products while preserving their original quality.

The introduction of the RF technology was aimed to improve operational efficiency, reduce process times and ensure uniform defrosting while maintaining the sensorial and nutritional properties of the raw fish.

Seafood processing companies face stringent requirements for on-time deliveries and high-quality standards. Traditional defrosting processes (e.g. water bathing) are time-consuming and energy-intensive and both these shortcomings can also compromise the integrity and healthiness of frozen raw fish other than causing high production costs.

The company was looking for a solution that would guarantee rapid and effective defrosting of tuna and swordfish loins to increase throughput at its production facility, while preserving the superior quality of its raw materials – a must for its customers.

The RF equipment supplied by Stalam, with a maximum output power of 40kW, brings the temperature of approximately 500-600 kg/h of fish loins from storage at -18°C to the ideal temperature (-2/-3°C for swordfish and -4/-5°C for salted tuna) required for further processing or portioning and re-packaging before delivery in just 25 minutes. The defrosting process is uniform and gentle, preserving the product’s texture without the risk of excessive thawing or undesirable drip loss.

One of Europe’s largest soft wheat mills partnered with Stalam to enhance the quality of their soft wheat bran and rye flour. The adoption of Stalam’s radiofrequency (RF) technology significantly improved the sensory and microbiological parameters of these products.

The milling industry faces challenges in maintaining the quality and hygiene of flours and by-products. One of the most critical issues is reducing moisture and microbial load to prevent long-term spoilage and the formation of aflatoxin-producing molds, which are harmful to human health.

The customer aimed to increase the market value of its soft wheat bran and rye flour by lowering moisture content and improving the microbiological profile, making its products more attractive in the healthy food market.

The RF Solution

Stalam’s radiofrequency equipment was designed to perform a combined process: drying, sanitizing, and light roasting. The machine uses a continuous conveyor system equipped with an 85 kW RF generator and controlled air circulation inside the treatment tunnel.

Stalam carried out pilot tests that demonstrated the RF technology’s ability to not only reduce moisture in the bran and flour to the desired levels but also significantly lower microbial load. Additionally, the process enhanced the sensory characteristics (color and flavor) of the product through controlled light roasting.

In the food industry, ensuring a high and consistent quality standard is of paramount importance.

A renowned Italian producer of premium charcuterie and meat-based ready meals recently faced challenges with its traditional thawing method. Stalam’s RF (Radio Frequency) technology has proven to be a game-changer in its production lines by improving the operational efficiency, shortening the process time, and leading to a better product quality.

Meat processors often encounter issues with lengthy and uneven thawing processes, which negatively impact the operational efficiency and the final product quality. Conventional defrosting methods like ventilated chambers, forced-air containers, etc., lead to inconsistent and non-uniform temperatures, affecting the appearance and texture of meat, making downstream processes more difficult and impairing microbiological safety.

Our valued customer, a market leader in delicatessen like cured meat, bacon, salami, sausages, and, more recently, ready-to-eat meals, relied on traditional defrosting chambers before processing its frozen raw meat. The company faced all typical problems related to uneven and lengthy thawing, as well as problematic management of the sequence of placing the meat lots to be processed into, and taking them out from, the defrosting chambers.

Stalam’s RF equipment could solve all such issues by ensuring a uniform, fast, and just-in-time defrosting process, leading to a well-controlled final temperature of the raw meat, lot after lot, in a continuous way. Machines with hourly defrosting capacity from 2,000 to 4,000 kg/h were successfully installed in three different production facilities, operating 8-10 hours on a daily basis. In each factory, the production flow was optimized, the product quality improved, the carbon footprint reduced, the microbiological safety enhanced, and, overall, the profitability increased.

Following successful test results, the company decided to integrate a multi-module RF dryer into their production line, initially operating for an 8-hour shift and producing dried fiber in just 2.5 hours.

In 2022, the unit embarked on an extensive research and experimentation initiative to identify optimal sanitization technologies.

Drawing on over 40 years of expertise in designing and developing Radio Frequency (RF) solutions for industrial processes, Stalam played a pivotal role in advising SINFIC on identifying a suitable equipment for sanitizing plant substrates. The collaboration extended to rigorous testing carried out by Stalam’s R&D experts, who meticulously examined samples provided by SINFIC specialists. Through well-controlled RF treatments, optimal temperature curves were determined against predefined qualitative parameters, ensuring efficacy and safety.

Following the RF treatments, SINFIC’s Nutriboty carefully verified the samples’ qualitative and microbiological integrity. With conclusive evidence from laboratory analyses, the “SANILEAF+” model emerged as the preferred system for equipping SINFIC’s operations. The equipment’s versatility was evident as it effectively sanitized a wide range of botanical raw materials, from leaves to seeds, across more than 50 different species.

Dr. Manuel Mantua, a food technologist at SINFIC, emphasized the initial objective of rapidly and efficiently sanitizing botanical raw materials to enhance their microbiological parameters. Dr. Bruno Pacheco, manager of the Nutriboty Food Department, confirmed the equipment’s efficacy in achieving satisfactory results while maintaining essential sensorial qualities.

“We are using the equipment to treat different botanical products, obtaining satisfactory results both in terms of reduction in microbiological contamination and preservation of the required sensorial qualities.”

For Stalam, the project evidenced the value of its industrial experience in similar applications, ensuring delicate yet effective treatment to preserve product characteristics. Michele Bicego, R&D manager for innovative processes, highlighted the equipment’s efficacy in treating various products, from medicinal herbs to grains, with utmost precision.

“In the development of this project, our previous industrial experience in similar applications was of great help, such as the sanitization of medicinal herbs and the disinfestation of agricultural food commodities, all products that require effective but at the same time delicate treatment on the product, in order to best preserve its chemical-physical, functional and sensorial characteristics.”

Roberto Cian Seren, Stalam’s business development advisor, expressed satisfaction with the fruitful collaboration, recognizing SINFIC’s professionalism and trust in Stalam’s expertise. The project’s success exemplified the synergy between the two companies, confirming the RF technology’s ability to sanitize products effectively without affecting their qualitative attributes.

Driven by a passion for excellence – as a proof, the company is ISO 28000 certified – Diemme has always sought high quality raw materials and processes that further improve the qualitative aspects of its products.
In the pursuance of its vision, Diemme Fiori has started an in-depth activity of selection, testing and validation of solutions that could overcome the problem of the presence of insects and their eggs in the packages, while maintaining unchanged the visual and “aromatic” qualities of the flowers, which are exported to the most qualified world markets.

Stalam, which has been offering for over 40 years to the world markets the widest and most advanced range of industrial Radio Frequency drying and thermal processing equipment – including sanitisation, has taken up the challenge of Diemme Fiori, studying and designing a customized system for the continuous disinfestation of flowers.

After an initial phase of defining the customer’s specific needs, Stalam provided experimental support through its R&D Laboratory, where multiple RF treatment tests were carried out on a wide range of flowers and fronds contaminated with weed samples provided by the Regional Institute for the Floriculture of Sanremo. The tests were carried out on different type packages (envelopes, bags and cardboard boxes) and sizes.

The Radio Frequency treatment, being an endogenous process in which heat is generated directly inside the product mass subjected to the electromagnetic field, has allowed the rapid and uniform temperature rise of the flowers directly inside the packages, regardless of the packaging type and size.


The RF treatment raised the temperature from around 20°C to around 60-65°C in a few minutes, confirming itself as an effective method for the disinfestation of the flowers, also allowing for a light overall sanitisation.

After the RF treatment, the samples were sent to analysis laboratories to verify that there were no eggs hatching and that the flowers had maintained the best quality characteristics.

Diemme Fiori, given the excellent results achieved, provided Stalam with the necessary details on its production needs and on all the references to be processed; Stalam then proceeded to design and build a customized equipment, based on the SANILEAF+ series, having the most suitable characteristics in terms of production capacity, size and optimization of operating costs.

The range of flowers that are successfully treated in the SANILEAF+ equipment is very wide. Some examples are shown in the below table, detailing the product, the type of packaging and the weight of individual packages:

Leonardo Papone, DIEMME FIORI’s project leader, says: “Our main task was the rapid and efficient sanitization of lavander bunch boxes, reducing energy consumption as much as possible. Over the time, the objectives have become even more demanding and, thanks to the collaboration with the Stalam team, we have expanded our range of applications and we sanitized various types of products packaged in different ways, such as 25 kg bags, as well as other ornamental dry products in different package sizes.” Papone then specifies: “Through various tests carried out with Stalam engineers, we have exploited the flexibility and adaptability of the Radio Frequency system to develop the ideal “recipe” for practically every product in our warehouse. Once the procedure was established, we were practically certain of the entomological sanitization of the product. And to guarantee maximum quality, we conducted detailed analyzes on the chemical composition of each treated product, monitoring any changes during the heating and cooling process: we only found negligible variations compared to our reference standards”.

Paolo Di Massa, CEO and owner of Diemme Fiori, confirms: “Our commitment for the future is to make more uniform the raw material entering the RF equipment, in order to obtain even more consistent results for each reference. Given the effectiveness of the RF equipment, we are focusing our efforts on the complete sanitization of all raw materials stored in our production site, in order to guarantee an environment free of external parasites”.

Michele Bicego, Stalam’s R&D innovative applications manager, states: “In the development of this project, our previous industrial experience in similar applications was of great help, such as the sanitisation of medicinal herbs and the disinfestation of grains for use in the food industry, all products that require effective, but, at the same time, delicate treatment on the product, in order to best preserve its chemical-physical, functional and sensorial characteristics”.

And Roberto Cian Seren, business development advisor of Stalam, states: “We are extremely satisfied and flattered by the positive results obtained from the collaboration with Diemme Fiori, that we thank for the great motivation and professionalism with which it supported and validated our work, as well as for the trust it has granted us with the purchase of a brand new SANILEAF+ equipment“.

To sum up, the project and the synergistic collaboration between the two companies were a great success for both. The ability of Radio Frequency to disinfest and sanitize all products subjected to treatment in an extremely effective and efficient way, without altering their qualitative characteristics, has also been confirmed on these substrates.

Specifically, the following benefits achievable with the Radio Frequency treatment on dried flowers and other fronds have been scientifically proven:

  • It deactivates and/or kills all eggs, larvae, pupae and pest insects
  • It allows for a better aesthetic quality of flowers compared to traditional disinfestation treatments
  • It allows for a longer shelf life (preservation) of dried flowers and essences
  • The treatment can be applied to a large variety of products, either in-bulk or packaged (in plastic, paper or bags and/or in boxes, even very bulky ones).

Last but not least, it should be kept in mind that the RF technology achieves these important results by avoiding the use of potentially harmful chemical products and without any polluting dispersion into the environment, as well as using renewable energy sources for its operation: therefore, this is an absolutely “green technology” and respectful of the healthiness of both the products and the environment.

Mexico strategic location, and strong economic growth has led to an national protein consumption to be raised slowly but steady in the past decades. People are now looking for more sources of protein, Mexico historically has been a big poultry consumer and is part of a traditional Mexican diet to include poultry in the everyday menu. Global situation is very volatile and local production cannot match the internal market demand for poultry products, that´s why Mexican producers have to find different sources of poultry, pork and beef raw material outside the local market; that means to bring frozen products from other places to keep up with the local market demand for protein products.

Stalam and its partner, Epsilon Soluciones, as a partner of technology to all of mexican customer, are always promoting more efficient ways to process protein in the area. After years of marketing, testing, analyzing and negotiation we had the opportunity to work together with two big customer within the Mexican market, both located strategically in the north of Mexico, one in Monterrey, the Industrial Capital of Mexico “JJ ALIMENTOS”, and the other one in La Laguna region which is one of the strongest industrial and protein processing center in Mexico “PILGRIMS México”, part of JBS.

With both big customers we have supplied the STALAM RF Technology in order to improve quality, reduce plant space, reduce time and increase yield in their defrosting operations, in less than a few weeks both customer increase in more than a 100% their defrosting capacity and also worked with a 0% yield loss in their defrosting processes. Using the Stalam RF technology it has proven also to be more energy efficient than expected compared with the technologies they used prior to the acquisition of the Stalam equipment that means also a big financial benefit just for running the machine instead of doing in their previous processes.

“JJ ALIMENTOS” owns a COLDWAVE+ 85kW that is used for tempering about 1500 – 2000 kg/h of frozen blocks of chicken (with and without bones) from -18°C to around -2°C. The thawing is then completed in defrosting tumblers. Thanks to the STALAM machines the total thawing time has been reduced of 60%, thus increasing the production capacity of around 2.5 times, improving the quality of the product and yield. 

“PILGRIMS México” owns 2 machines COLDWAVE+85kW used for tempering around 3000 – 4000 kg/h of frozen blocks of chicken and pork bellies. The processing time is around 25 minutes. Even here the processing time has been drastically reduced compared with the previous defrosting system and the yield improved.

STALAM RF Technology has proven to be a very accurate bet for the protein processors because of the reliability of the technology and also because of the big benefits it represents, time, resources, energy, quality and control. Both of our customers had much better results than expected and the simple fact that they can run more than double of their capacities using less time, less space and less energy and having a 0% yield loss, meaning that Stalam technology is one of their best investments in the poultry processing lines in the last years.

The results speak for themselves, when talking about defrosting , now also our customers in Mexico and in America know that STALAM is an essential partner for success and will keep using them for the benefits it accomplishes giving these results not only to our customers, but to all the supply chain involved in the poultry processing.

Now it can tempering animal offals, with different packaging and thickness, from -15°C to -3°/-1°C just in 15-20 minutes.
